Also called burnt cream, Cambridge burnt cream or Trinity cream, and almost the same as crema catalana, a dessert of rich custard under a layer of hard caramelised sugar. It is usually served lightly chilled; caramelising the sugar warms the upper layer of custard, while its centre remains cool.
